Parfaits are such a fast, easy, and filling breakfast option, and I can’t believe we haven’t published a new parfait recipe in over 2 years! This updated recipe involves making granola, using your favorite yogurt, and loading up the berries – whatever kind you’re feeling! (But you honestly don’t need to make the granola at all if you don’t want to!)

We love this has a sweet breakfast for two people, or as a great prep for the week if you’re not sharing, or don’t want to!

How to meal prep this berry parfait recipe

For these photos, I assembled my parfaits with the granola, but the granola didn’t stay crunchy. I personally didn’t mind. But if you do, I recommend keeping the granola on the side.

I also want to note – I put wayyy too much granola in these (yes it’s a thing) – I was worried it wouldn’t be apparent in the layers. So that’s another reason to keep it on the side. That way you can add as much granola as you want in the moment.

How to customize this parfait recipe

Change the granola

This granola is great without add-ins, but feel free to add any of these that you enjoy!

  • Chopped pecans, almonds, or walnuts
  • Dried fruit: dried cranberries or golden raisins would be good! Dried cherries are also DIVINE!
  • Chocolate chips (after it has been cooked; otherwise it will become a melty mess!)
  • Any seeds you enjoy (after it’s been cooked)
  • Leave out the coconut flakes if you’re not a fan!

Are oats gluten-free?

Technically, yes oats are naturally gluten-free! However, there is still a chance of cross-contamination with gluten-containing grains when they are at the farm or during transportation. So if you are gluten-free, make sure to pick up certified GF oats to be safe! Some companies, such as Bob’s Red Mill, specifically make gluten-free oats for those who need to be extra safe.

How to vary this parfait’s fruits

In this parfait recipe we are using blueberries, but feel free to add different kinds of fruit. Always remember to shop seasonal when you can! Here is some other fruit that would be delicious in a parfait:

  • strawberries
  • blackberries
  • raspberries
  • mango
  • kiwi
  • passion fruit

What yogurt to use in this parfait recipe

Greek yogurt or regular yogurt works great in this parfait recipe. I recommend using plain or vanilla since you already have fruit in this breakfast. But if you’re all about fruit-flavored yogurts, go for it! Just know it will be more sweet than what we’ve written up here.

Other non-dairy yogurts I like: CoYo, Kite Hill, Forager and So Delicious.

Do you have to use Mason jars?

Nope. You can totally use the same containers that you normally use for overnight oats if you don’t have glass Mason jars like these. Any Tupperware would work. But if you want to grab some Mason jars, click here for my picks on Amazon.

How to store these parfaits

This breakfast (or snack!) will last in the fridge for up to four days. It is not freezer friendly and you definitely don’t want to reheat it before eating (warm yogurt? no thanks!) Happy prepping!

Berry Parfaits with Homemade Granola

Ingredients

For the granola

  • 1 cup old fashioned oats
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 3 TBSP butter
  • 3 TBSP brown sugar
  • 1/2 cup coconut flakes optional

For everything else

  • 3 single-serving yogurt of your choice
  • 3 cup blueberries sub raspberries or strawberries
  • 3 tsp honey optional for drizzle

Instructions

  • Preheat your oven to 325 F.

  • Melt the butter in the microwave or on the stove and stir in the brown sugar. Set aside. Mix the oats, cinnamon, salt, and coconut flakes in a bowl. Pour in the brown sugar mixture and mix well with a spatula. Pour the oats onto a baking sheet and spread them out slightly. Bake for 20-25 minutes, stirring halfway. The oats should be golden brown in color when finished! Let them cool on the pan.

  • Add the yogurt and one-third of the fruit to a jar or container and seal. Repeat with the other two containers and store them in the fridge. Leave the granola on the side if you want it to stay crunchy and add as much as you’d like before eating! Granola can be stored on the counter at room temp for a week or up to 2 weeks in the fridge.
