So many people are intimidated by Alfredo sauce, but in reality this four ingredient Asiago Alfredo sauce is one of the easiest pasta sauces to make.

From start to finish, it takes about 10 minutes, and it’s ready by the time the pasta boils.

Asigo cream sauce is usually made with a basic white sauce (also called a roux) with flour, butter, and milk. The flour and butter are melted together, cream is added, and the mixture is cooked until it’s thickened, and cheese and other seasonings are added.

An Alfredo sauce is made without the white sauce (roux) base, usually only having butter, cream, cheese and seasonings added.

Sometimes an Alfredo or cream sauce has cream cheese added to help thicken the sauce, and make it less likely to separate.

Why did Olive Garden get rid of Asiago garlic Alfredo?

Back in 2018, the Asiago Garlic Alfredo at Olive Garden was discontinued.

We don’t know why they dropped the recipe, but we’re guessing it was either because it wasn’t selling well, or because it’s so similar to the classic Alfredo. People are pretty upset, as you can see from this post on Olive Garden’s Facebook feed!

This recipe has a lovely, similar taste, to the Olive Garden recipe.

Here’s how to vary this recipe to make it a copycat of the Olive Garden Asiago garlic Alfredo recipe. Just mince two garlic cloves, and add to butter while melting, and add 4 ounces of cream cheese when you add whipping cream.

Can you make Alfredo sauce with Asiago cheese?

Absolutely! Asiago melts beautifully, plus it has a milder flavor that many people (especially kids!) prefer to Parmesan.

What you’ll need:

  • 1/4 cup salted butter
  • 2 cups shredded Asiago cheese. Important! Use a fresh Asiago, do not use the kind that comes as granules in a can (as this won’t melt properly).
  • 1 cup half and half cream ORwhipping cream
  • 1/4 tsp crackedblack pepper corns (like these from Amazon)

How to make:

  1. Melt butter on low heat. DO NOTlet bubble or boil.
  2. When butter is melted, add 1 cup half-and-half cream and whisk together. Do not let cream bubble or boil. Keep on low heat.
  3. Add 1 cupof cheese, and whisk until almost melted. Add last 1 cup ofcheese and whisk. Add pepper.
  4. Be careful to keep heat on low and never let mixture bubble or boil. If heat is too high to Asiago Alfredo sauce will separate and will be almost ruined.

Here’s the secret to never ruining your sauce. Never let the sauce boil or bubble. If it gets too hot, the sauce will start to separate, and be a clumpy mess.

How to make Alfredo sauce thicker

If sauce is not thickenough for your liking, you can add 1 teaspoon ofcornstarch after cheese is melted,and whisk in. Keep heat on low and whiskuntil thickened to your desired consistency. Be careful adding cornstarch, as too much can make a thick,gloppy mess of your Alfredo!

How to reheat leftover sauce

It’s best to serve any creamy cheese sauce immediately after you make it.

That said, we successfully reheat this sauce all of the time. Just reheat the Asiago Alfredo sauce on the stove top by adding a small amount of half and half cream (milk will work as well), and reheating on low heat. Do not let the sauce bubble, it will begin to separate.

You can also reheat the sauce in the microwave. Just add a small amount of half and half cream (milk will work as well), and reheat on medium high for 30 seconds. Remove from microwave, stir, and add a little more cream or milk if the mixture looks oily or like it’s separating. Remove from microwave and stir. Repeat 30 seconds at a time until warm.
