I USED REAL POTAOTES,BECAUSE WE ALL KNOW THEY ARE LOWER IN CALORIES AND BETTER FOR US! I ADDED A LITTLE SEA SALT TO GIVE IT JUST A HINT MORE FLAVOR! AND I JUST HAD TO ADD SOME GARLIC AND A LITTLE GRATED CARROTS!

I used real potatoes (lower in calories less fat) then added some southwest seasoning of my own. I also substituted low fat cheese. Turned out great but I think next time I would rather have a few real bits of well drained bacon sprinkled on top. - 11/20/07

Love the soup but don't use the flour. I also use raw diced potatoes and real unpreserved bacon instead of the packaged hash browns and the baco bits (can't do soy). It takes a bit longer, but the results are sooooo worth it! - 1/23/18

This was quick and easy and quite good! I used two pounds of potatoes because we need to use a bunch up. I just chopped them up then mashed them at the end. Also, we didn't have bacos so I used some turkey bacon. Easy substitutes and it was yummy! - 3/8/12

I switched things around. I used homemade chicken stock, fresh shredded red potatoes instead of the frozen, left out the bacon bits and changed out the Colby-Jack cheese to Mozzarella and used almond milk instead of regular milk. Why isn't my potato soup creamy? Most creamy soups require you to add dairy of some sort into it. If you're finding your soup is too thin adding milk, add in cream instead, or whole milk.
Yes, adding heavy cream or milk can be a great way to thicken your potato soup while also adding richness and creaminess. Simply pour in a small amount of cream or milk while your soup is simmering, then continue to cook until it reaches the desired thickness. Be sure to stir frequently to avoid scorching.
ANSWER: Waxy potatoes or those called boiling potatoes stand up well in soups and stews. These have thin skin and are high in moisture and low in starch. Potatoes that are low-starch and high-moisture hold together better. Yukon Gold potatoes are on the medium-starch side and will hold their shape in soups.
I always dump half the tater water out and add whole milk to get the right consistency. Potatoes contain starch which is a natural thickening agent. Stop the cooking process right before it is the consistency you want it will thicken more.
The best options for thickening soup are cream or half and half. Plain yogurt or even freshly grated cheese works well and adds an extra layer of tangy, salty flavor. Add the dairy at the end and avoid bringing the soup to a boil since this can cause yogurt, cheese, or cream to split.
Similarly to half-and-half, milk makes a good heavy cream substitute when it's combined with melted butter. Combine 3/4 cup milk and 1/4 cup melted butter for every cup of heavy cream.
